When somebody says something like:

"We have been financially lucky in our lives, touchwood"

When they touch wood, its so that they don't jinx it. For example, if you said that, and didn't want to be financially un-stable, you'd say touchwood, so you didn't jinx what you said.

You say it kind of as an after thought when you don't want to jinx yourself because you don't want what you just said to actually happen.
It's usually after you say you haven't experienced something bad. Uhm for example, "I haven't been in a car crash... touch wood" or, 'I haven't been late for work yet... touch wood" like saying that you haven't is bad luck.
Often people touch their head instead of actual wood as a bit of a joke.

It's the same thing as "knock wood" It means Hope it works out well" It's like if you apply for a job and you hope you get it. You're talking to a friend about it and they hope you get it too. The knock on wood or touchwood. It basically means good luck.

It's the English equivalent of the American "knock on wood".
It is touch wood, not touchwood in this context and is, as other posters have said, a superstitious habit aimed at not jinxing your good fortune by talking about it.

Thank you หลายๆ เด้อ.....
